Mushrooms risotto

Risotto with mushrooms is a timeless first course. Some people prefer risotto with porcini mushrooms, but this type of mushroom is often difficult to find and sometimes, given their intense taste, it is not always appreciated by everyone.
Ingredients
Carnaroli rice 240 g
Honey mushrooms 200 g
Champignon mushrooms 200 g
Onions ½
Butter 80 g
Parmigiano Reggiano DOP 60 g
Salt
Parsley to be chopped
White wine 50 g
Water 1 l
White pepper
Extra virgin olive oil
Method
1. Put the dried mushrooms to soak in warm water for at least 2 hours
2. Prepare the broth
3. Put butter and oil to brown an onion in a saucepan
4. Add mushrooms and rice, let go for a couple of minutes, add the white wine and let it evaporate.
5. Put the broth and start turning until the rice is cooked properly
